Baked Apple Slices with Cinnamon Cream

‘An apple a day keeps the doctor away.’ With this in mind, and not wanting you to smudge your red lipstick, why not try slicing and baking them? Baking intensifies the appley flavour; just adding a little sugar and lemon turns this into a very clean-tasting dish. Think of it as the best bit of an apple pie.

Ingredients
• 4 Braeburns, Coxes or other dessert apples
• 4 tbsp brown sugar
• juice of 1 lemon
• 1 tbsp ground cinnamon
• 300ml (10fl oz) whipping cream

Step 1.

Preheat the oven to 180°C/fan 160°C/gas mark 4.

Step 2.

Core the apples (if using Russet apples, peel them first) and place in a small, shallow ovenproof dish. Sprinkle with the brown sugar, squeeze lemon juice over and bake for 20–25 minutes.

Step 3.

Meanwhile, add the cinnamon to the cream and whisk.

Step 4.

Serve the apples as soon as they come out of the oven, mixed with a generous dollop of the cinnamon cream for each serving.
