Snowmen Rum & Chocolate Truffles

These decadent truffles are the perfect after dinner treat.

What you'll need

• 150ml double cream
• A knob of unsalted butter
• 150g good-quality dark chocolate (70% cocoa solids), broken into small pieces
• A pinch of sea salt
• 1 tbsp rum (more if you want a stronger taste)
• 200g desiccated coconut
• 50g marzipan
• Orange food colouring
• 24 raisins

Step 1.

Put the cream in a pan over a medium heat and let it heat up till it's nearly boiling. As soon as tiny bubbles start to appear, add the knob of butter. Once the butter has melted, pour this hot mixture over the chocolate pieces, whisking as you go, so the chocolate melts slowly.

Step 2.

Add a pinch of salt to the mixture and the rum. Once completely melted and smooth, pour your melted chocolate mixture into a glass bowl, place in the fridge and allow to cool until firm enough to shape, but not too solid.

Step 3.

Place the desiccated coconut onto a large, clean surface. Using a teaspoon, scoop out a ball of chocolate and shape into a ball using your palms, then roll into the desiccated coconut so that it's completely covered.

Step 4.

For the noses, combine the marzipan and a few drops of the orange food colouring. Shape into little hook shaped noses, then gently press on to the snowmen. For the eyes and buttons, simply press the raisins onto the snowmen. Place in the fridge and remove 30 minutes before serving.
