Sides to Have With Lamb
A selection of our favourite dishes to serve alongside lamb for something a little different...
Pomme Anna
What You'll Need:
• 125g clarified butter, softened.
• 1.5 kg potatoes, peeled and sliced thinly
Prep: 15 Mins
Cook: 45-50 Mins
Preheat the oven to 2000c / fan 1800c. Heat a 23cm non-stick skillet or oven proof frying pan on the stove. Once it is hot add 3 tablespoons of the butter to the pan and arrange a layer of overlapping potato slices over the base of the pan. Season with salt and pepper.
Spread a little more butter over the top and then continue the layers of potatoes, butter and seasonings until you are finished. Transfer the skillet to the oven and bake for 45-50 minutes until golden brown and cooked through. Transfer to a platter to serve
Savoy Cabbage with Sweet Chestnuts and Streaky Bacon
• 1 savoy cabbage, cored and sliced (about 500 g, trimmed)
• 150g smoked streaky bacon, cut into lardons
• 150g cooked sweet chestnuts
• 50g butter

Cook: 10 Mins
Put the sliced cabbage into a large saucepan and add 2cm of boiling water. Bring to the boil and cook for 4-5 minutes until the cabbage is tender. Strain well. Set aside.
Meanwhile, place a saute pan on a high heat, add the bacon and cook for 4 minutes, then add the chestnuts and the butter. When the butter has melted, toss the bacon and chestnuts to mix then add the cabbage, mixing well. Heat through and season to taste.
Onion Sauce

• 75g butter
• 2 onions, diced
• 3 tbsp plain flour
• 500ml milk

Cook: 16 Mins
Melt the butter in a saucepan, add the onions and cook gently for 10 minutes, stirring, until softened. Add the flour and cook for 3 minutes. Gradually add the milk to the pan, stirring constantly until the sauce comes to the boil and thickens. Cook for 3 minutes and season to taste
