Rustic Bonfire Bread

A delicious bread is perfect for serving with a hearty soup around an open fire.

What You’ll Need:

• 1 tbsp olive oil
• 1 red onion, finely chopped
• 150g wholemeal plain flour
• 50g pinhead oatmeal
• 200g plain white flour, plus extra for dusting
• 2 tsp cream of tartar
• 1 tsp bicarbonate of soda
• 1 tsp salt
• 1 tsp caster sugar
• 1/2 tsp English mustard powder
• 30g butter, melted
• 250 - 300ml milk
• 175g mature cheddar cheese, grated
• leaves from 1 sprig rosemary, chopped
• leaves from 1 sprig thyme
• 50g sunblush tomatoes, chopped

COOK: 35-40 MINS

Step 1.

Heat the oil in a frying pan, fry the onion over a low heat for 7-10 minutes until really softened. Remove from the pan and set aside to cool. Heat the oven to 190 c / fan 170

Step 2.

Sift the dry ingredients into a large bowl and make a well in the middle. Combine the melted butter and milk, then pour the mixture into the well. Mix to a soft dough.

Step 3.

Add three quarters of the cheese, the herbs, cooled onion and tomatoes then gently knead on a lightly floured surface to combine. Divide the dough into 8 lumps of equal size and shape them into rough rounds that are 2 finger widths deep.

Step 4.

Place the pieces of dough side by side on the baking sheet, scatter over the remaining cheddar, then bake for 25-30 minutes until the rolls are golden brown and the cheese is bubbling. Cool on a wire rack and eat while warm.
