Chargrilled Avocado & Salsa

Arthur and Dorothy love to remind us that apparently you can survive if your diet is just avocados! We love them and are always looking for ways to include them in our meals. Chargrilling the rich smooth avocados adds a caramelised dimension that is wonderful with the texture and tastes of a fresh, homemade salsa.

What You’ll Need:
• 1 avocado per person, halved and stone removed
For the salsa
• 3 tomatoes, diced
• 1 red onion, diced
• 3 tbsp chopped coriander leaves
• juice of 1 lime
• 1 Scotch bonnet chilli, deseeded and finely diced

Step 1.

To make the salsa, place all the ingredients together in a bowl

Step 2.

Season with salt and freshly ground black pepper, then mix well.

Step 3.

Chargrill the avocado until nicely marked.

Step 4.

Fill with salsa to serve.
